The Tunaria Festival is founded on the three guiding principles that define The World Islands: innovation, sustainability, and bringing the best of Europe. Innovation is brought to life through the creation of exclusive bluefin tuna dishes that do not exist in this form anywhere else. Sustainability is embedded in the sourcing process, with bluefin tuna responsibly harvested using Spain’s traditional “Almadraba” technique, ensuring minimal environmental impact. Bringing the best of Europe is reflected through the festival’s Spanish inspiration, celebrating the best of what this nation stands for through cuisine, design and experience.
At the heart of the experience, the live cutting ceremony during the Tunaria Gala Dinner offers an immersive and educational spectacle, where guests witness a close-up encounter with the craftsmanship and full journey of this prized ingredient from ocean to plate. Each bluefin tuna is sustainably sourced using Spain’s ancient “Almadraba” technique, where fish are carefully guided along natural migration routes in spring rather than chased, ensuring both quality and minimal environmental impact. This selective and eco-friendly approach targets only mature fish while avoiding any bycatch, preserving both marine ecosystems and product quality.
During the live demonstration, expert chefs break down the whole fish with precision, introducing each cut – from prized, richly marbled sections to leaner selections – while guests enjoy tastings prepared on the spot, from fresh sashimi to lightly seared bites. Reflecting a deep respect for the ingredient, every part of the tuna is utilised, including bones and trimmings, reinforcing a zero-waste philosophy that celebrates both tradition and sustainability.
As the evening unfolds, guests can continue their night across vibrant island venues: from the refined ambiance of an elegant champagne bar to the theatrical cabaret performances at Nocturna. The experience builds toward a finale at Stardust, the island’s very own discotheque, where music and entertainment carry on into the early hours.
